A friend of mine just shot a bunch of mallards and teals and I get to cook them. Anyone got really good recipes for duck? I've only cooked wild mallard once, in a sour cherry sauce, and it was really good, but a long time ago. I would like to try it again, but want to try a few other ways as well.
Ideas?

Go to www.cooks.com and type in "duck" or " goose". I get alot of good recipes from this site. They had something like 309 recipes just for goose alone.

I'm a big fan of Cajun Injector. Use a fowl marinade, inject duck breasts thoroughly and wrap with bacon, held together with toothpicks. Grill for about 7-10 min (depending on temp) on each side. When the bacon is crispy, the duck is done. Both duck and bacon have excellent flavor. Modification ideas: try different flavors of marinade or make your own; use various types of wood chips for smoky flavoring Richard Butler
