Appetizers and Snacks

Big Game
Top each serving with chopped onions, shredded cheese, olives and sour cream. Serve with tortilla chips or corn bread on the side.

Beets, among the sweetest of vegetables, lend themselves beautifully to salads. Here, they’re roasted for even more intense flavor, then dressed with a simple orange vinaigrette that’s scented with cumin.

Small Game
Place cut-up squirrel in large pot and cover with water. Add salt, pepper and bay leaf. Bring to a boil and reduce heat. Simmer for 1 to 2 hours or until meat begins to fall off the bone, adding water as necessary.

Upland and Waterfowl
Cut sage hen into serving pieces, slicing breasts to 1/2-inch thickness. Create mixture of flour, salt and pepper.
